No oil Yahkni (syn free lamb pilau rice)

Yahkni pilau, meat pilau, lamb rice

So this dish is my husbands favourite, since he was a child my mother in law has made this on Eid and special occasions. But it’s normally full of lots of oil and ghee! My version has no oil or ghee and and still has lots of flavour and depth. This version was cooked using my pressure king pro. It’s important to fry the onions on a high heat and keep spraying as it drys out, I let them almost stick to the pan and keep stirring. The brown bits at the bottom of the pan are where the colour and flavour comes from. If you don’t have a pkp then you can cook on the stove 🙂

  • 500g lamb meat on the bone all visible fat removed

Dry spices

  • 2 tsp shahi jeera seeds
  • 10cm cinnamon stick
  • 4 cloves
  • 6 peppercorns
  • Groovy food coconut spray or any one calorie cooking spray.
  • 3 onions chopped finely
  • 1 tablespoon of garlic ginger paste
  • 500g basmati rice
  • 4 tsp salt

Method

  1. Wash rice in at least 6 changes of water and leave to soak in cold water.
  2. Spray pan with fry light and add onions
  3. Dry onions on a high heat stirring constantly until they are Browning
  4. Keep frying adding more spray and some water to take off the colour at the bottom of the pan. Adding water if needed
  5. Add the whole spices and cook down
  6. Add the garlic and ginger paste and fry for a minute
  7. Add this mixture to the PKP
  8. Use 100ml of boiling water to clean off the remaining colour and flavour
  9. Spray the PKD add the lamb and cook on the meat until brown
  10. Once this is done add the water from pan and more if needed to cover the lamb
  11. Cook this on the meat setting for 9 minutes
  12. Once lamb has finished cooking, open up and add the rice
  13. Add 900ml of boiling water and use 100ml in the pan to clean the pan of the juices and add that to the pkp
  14. Add 4 teaspoons of salt and stir
  15. Set to rice and cook for 14 minutes
  16. Once done let the cooker do a ‘slow release’ this is when you don’t open the pressure node and allow the steam to naturally release.
  17. Check if rice is done and fun a fork through the rice to fluff up.
