Pumpkin Prawns

This idea came from the slimming world sisters. I had what seemed to be one of the last batches of in season pumpkins and wanted a nice dish I can use on slimmimg world plan! Its a very sweet dish and lovely with rice or hot buttered naan.

*tip* this cooks really well in a non stick pan

Ingredients

  • Coconut cooking spray or table spoon of oil
  • 750 g peeled and cubed pumpkin or squash
  • 500g prawns (I used frozen uncooked tiger prawns, deveined, shelled but tail left on)
  • One bombay or white onion finely chopped
  • 1 large tomato seeds removed finely chopped
  • Dried whole Kashmiri chilli
  • Teaspoon of Cumin seeds
  • Teaspoon of Coriander powder
  • Teaspoon of Paprika
  • Juice of one lemon
  • Salt to taste
  • Fresh coriander and lemon to serve

Method

1. Spray pan with cooking spray, add chopped onion, cumin seeds and salt, cook on medium heat for about 5 mins. If the onion looks dry, use spray until soft
2. Add the rest of the spices and cook for a further few minutes. If it seems dry, you can add a dash of water or use the cooking spray.
3. Add the pumpkin cubes and stir so they are coated and cover.
4. Once the pumpkin is half cooked you can add the prawns. Cover until prawns are cooked, stirring if needed
5. Garnish with fresh coriander and lemon

  1. I honestly might try this recipe! Pumpkins are literally the cheapest thing to buy here (Egypt) and although I don’t like prawns, I like making the effort for others.

  2. Never tried this combo…sounds extremely delicious….thank you for sharing…will try it…i love prawns and I look out new ways to indulge prawns…
